Shrimp Fry


ingredients:


Shrimp : 1/2lb
Salt : 1/2tsp
Chilli powder : 1/2tsp
Garam Masala: 1/2tsp
Turmeric : 1/4tsp(optional)
Besan Powder: 3tsp
Oil : 2tbsp




Preparation:
1. Take a bowl mix all Ingredients except oil. shrimp has some moisture so while mixing there is no need of water, if required then use little water. Keep a side this mix for 30 minutes.
2. Take a pan, keep on stove and pour oil, oil get heated,  take 6-8 shrimps(depending on the pan size you took more also) and fry in the oil.
3.Check the shrimp is cooked or not,it cooked then take it out and place on a tissue paper to remove excess oil. don't put the stove in high falme. Fry all the shrimps like this. Don't do over frying.
4.Place it in serving bowl and serve hot with Ranch or any hot sause.Other way you can serve this as side dish for Rice also.
note: If you over fried, then shrimp losses it's original softness, so check the shrimp is cooked then remove from the pan.
I am not deep frying, like this also you feel it as deep fried and it's soft and little crunchy.

Rava Dosa

ingredients:
Semolina/rava:2cups
Wheat flour:1/4 cup
Maida(all purpose flour):1/2 cup
Rice flour:1/2cup
Cumin seeds: 1tsp
Grated ginger:1tsp
Finely chopped green chillis: 2
few curry leaves
Few coriander leaves(optional)
Curd:1/2 cup
Water:6cup(depends on consistency of the flour) 
Salt to taste
Oil

Preparation:
          1.Mix all the ingredients except oil in a bowl, it becomes a rava dosa batter. keep aside this batter 1 to 11/2 hour to get crisp rava dosa.
          2.While preparing dosa's add more water it depends on pouring consistency, the batter should be thin not like normal dosa.
          3.Place the dosa tawa or dosa pan in the stove on high flame after dosa pan heated sprinkle little water on dosa pan and take ladle full of batter and pour from outward base of dosa pan like circle, fill the gaps in middle with dosa batter. Don't put the dosa batter as a thick lump on the pan just pour the batter evenly fill the gaps
         4.Pour 2tsp oil like drops in the edges of dosa and top of the dosa.
         5.Put the stove on medium allow it to cook for some time like 2mins and put on high for few seconds or it reaches golden brown color that time take the dosa.
Serve hot with chutney or sambar or ginger chutney

         For preparing rava dosa we need little bit pratice, pouing batter on the dosa pan. Don't skip oil it gives  more taste and helps to give crisp nature to rava dosa
if we want onions then add sliced oninons, chopped onions also.
         


Coconut kheer



ingredients:
 Raw coconut:2 cups 
 Milk:1/2liter
 Sugar:2cups 
 Rice:1/2cup
 Cashew:3tbsp 
 Ghee:5tsp
 Cardamom powder:1/2tsp








Preparation:
        1.  First we want to sock rice for 1/2 hour and grind with the raw coconut make as batter,use little water if needed while grinding, keep this aside.
        2.  Place thick bottom pan in stove and pour milk in the pan. boil the milk in medium flame stir well. once milk boiled fully then add coconut and rice batter allow it to cook it will take 7 minutes.
        3. stir continuously and keep the flame on medium.
        4.once coconut is cooked then add sugar and stir well. Otherwise bottom will burnt. cook this one for 5minutes, add cardamom power.




        5. Take another pan and pour 2tsp ghee fry cashews, add these cashews in payasam.
add remaining ghee in payasam and remove the pan from flame and serve hot or cold.
